How to Portion a Whole Cooked Chicken

 


In this video I pull a whole chicken out of the oven, let it sit to cool for about 10 mins then break it down into dinner and 4 days of meal prep for two people!

INGREDIENTS
1 Whole Glassen Farms’ Chicken, Roasted

TOOLS
1 Cutting Board
1 Long Knife
1 Fork
Multiple Tupperware

HOW TO

Step Carve the Breasts
-Hold the blade so it is flat, parallel to the cutting board, draw the blade back towards you from top to bottom cutting inward towards the rib cage.
-Draw the blade from the top, back towards you along the the line of the sternum down towards the ribs.
-Pull the breast away from the carcass and serve

Remove the Legs
-Cut down and back behind the leg between it and the carcass towards the joint.
-Cut from behind the leg towards the joint.
-Run the blade around the joint
-Remove the leg in one piece by twisting the joint apart.

Remove the Wings
-Cut behind the wing between it and the carcass
-Pull and twist the whole wing off, top and bottom.

Scrape the carcass
-Use a fork to draw towards you, pulling shreds of chicken off to use in wraps, soups, pies, stir fries and pretty well anything.
